Honestly, I don’t know how it happened, but every time I post a breakfast bowl, fish tacos, shrimp bowls, burritos, or even just a random plate of chips, someone hits me with the same question:“How do you make your pico?”

So here it is… the pico

you’ve all been asking about. This isn’t some fancy restaurant version, this is the pico I make at home every other week, that I put on pretty much EVERYTHING. And I mean everything: breakfast bowls, fish tacos, shrimp bowls, burritos, tacos, eat it with chips… you get the idea.

Also, quick note: adding mango is totally optional depending on what you’re pairing it with. It’s great with fish or shrimp, but for tacos or breakfast bowls I’ll usually skip it unless I’m feeling fruity. 😄

Ingredients You’ll Need

  • 4 Roma tomatoes

  • 1 medium red onion

  • 2-3 serrano peppers (more or less depending on how spicy you like it)

  • A thing of cilantro: I chop about ¾ of it

  • 1 large lime

  • A small sprinkle of garlic powder

Tools You’ll Want

  • Cutting board

  • Sharp knife

  • Tomato/onion chopper (optional, but definitely helpful)

  • Large bowl for mixing and storing

How I Make It (Step-By-Step)

  1. Chop the tomatoes.I start with the Roma tomatoes: dice them up and toss them right into your big bowl.

  2. Dice the onion.Chop up the medium red onion, but only add about ¾ of what you cut. I save a little bit because raw onion can take over sometimes.

  3. Mince the serranos.I like a little heat, so I mince 2–3 serranos and add them straight to the bowl. Adjust to taste!

  4. Chop the cilantro.Grab that handful of cilantro and give it a fine chop, then in it goes. 🌿

  5. Mix it up.Give everything a good mix so the tomatoes, onions, peppers, and cilantro start to hang out.

  6. Lime time.Cut your lime into pieces and squeeze about ¾ of it over the pico. Fresh lime juice is where this stuff really pops.

  7. Garlic powder.Just a light sprinkle over the top, then mix everything together one more time.

And just like that… you’ve got my pico. 🥣🍅

I’ll throw this on tacos, burritos, shrimp bowls, fish tacos, eggs, basically anything I can think of. And chips? Yeah, it’s a legit appetizer too.

Let me know if you add mango, or if you’ve got another favorite way to use it! 🌶️🍋
